Dough, ingredients, baking, service: the concrete markers to recognise a real Neapolitan pizza and tell it apart from an imitation, explained by Pépé Zino.
How do you recognise a real Neapolitan pizza? The dough, the ingredients, the baking and the way it reaches the table are enough to tell it apart from an imitation. Here are the markers our Italian chefs apply every day. To see our pizzas and book, visit our pizzeria in Aubagne.
True Italian pizza is an artisanal product of great finesse. The dough is given the resting time it needs, for developed flavour and an airy texture. Academia Barilla documents this UNESCO-inscribed tradition. At Pépé Zino the dough is prepared in our kitchen with quality flours, never delivered ready-made.
San Marzano DOP tomatoes from the foot of Vesuvius, extra virgin olive oil, Parmigiano Reggiano PDO, and the cheeses and cured meats of our antipasti: most of our products come straight from Italy. Discover our authenticity philosophy.
High-temperature, short-time cooking: soft centre, puffy edges, perfectly melted mozzarella. Service matters just as much: a Neapolitan pizza is best enjoyed at the table, straight from the oven, which is why Pépé Zino is first and foremost a restaurant with table service; takeaway is also available when you order online, but there is no delivery. See our pizzeria in Aubagne page.
Our pizza menu features the classics, Marinara, Margherita, Regina, Diavola and Quattro Formaggi, plus the chef creations: Genovese with Ligurian pesto cream and burrata, Tartufo with truffle cream, and the signature Pépé Zino with mortadella, goat cheese and pistachio.
Is the dough made on site or delivered ready-made? Do the products come from Italy? Is the kitchen run by Italian chefs? Is the pizza served at the table from the oven? Does the menu go beyond pizza? At our Aubagne restaurant the answer is yes to all five.
